Ingredients:
- 2 tsp Vanilla Extract
- 250 grams Butter, softened
- 100 grams Confectioners Sugar
- 120 grams flour
- 250 grams Corn Starch
- and some extra confectioners sugar to dust the cookies
Step by step:
- Cut the butter into little pieces. Add sugar and vanilla extract, and beat until soft and foamy.
- Mix flour and starch, add to butter mix.
- Knead using your hands until you have a smooth dough.
- Separate into three similar sized amounts, roll into a roll, wrap in foil and let them chill in the fridge for about 30 minutes.
- Preheat oven to 350F.
- After the dough rested and chilled for a bit, cut it in pieces and form little balls and set on a cookie sheet with parchment paper.
- Smash each little ball with a fork to flatten it. Bake at 350F for about 12 minutes.
- After the cookies are cooled off, dust them with some confectioners sugar.
