So let's start it off with my favorite Pasta Salad: Easy Sun Dried Tomato Pesto Pasta Salad with mozzarella, arugula, and cocktail tomatoes. A quick Italian-inspired cold pasta salad perfect for lunch, picnics, or potlucks.
Sun Dried Tomato Pesto Pasta Salad
Easy pasta salad with red pesto, sun dried tomatoes, arugula, cocktail tomatoes, and mozzarella.
Ingredients
- 1/2 box pasta, such as rigatoni or penne
- 1 jar sun dried tomatoes in oil, julienne cut if available
- 1 jar red pesto
- 1 to 2 cups cocktail tomatoes, or more to taste
- 1 package, about 1/2 pound, arugula or spinach and arugula mix
- 1/2 pound mozzarella cheese
Instructions
- Bring a large pot of lightly salted water to a boil.
- Add the pasta and cook for 8 to 10 minutes, or until al dente. Drain.
- In the large pot, mix the still-hot pasta with the whole jar of red pesto and the sun dried tomatoes with their oil.
- Let the pasta mixture sit until cooled.
- Put the arugula in a large bowl.
- Chop or grate the mozzarella cheese and cut the cocktail tomatoes in half.
- Add the mozzarella and tomatoes to the pasta and mix well.
- Pour the pasta salad on top of the arugula and serve.
