Recipe: Stuffed Mushrooms with Sweet Potato, Spinach & Goat Cheese
Mushrooms are my best buddies because they are full of Vitamin D, which I need TONS of in my diet. After a while just frying or chopping them into a salad gets old, so I am always happy to find new ways to prepare them. Today I want to share one of my favorite mushroom recipes with you!

Stuffed Mushrooms with Sweet Potato, Spinach & Goat Cheese

Ingredients
24 Mushrooms (Baby Bella)
1 cup Sweet Potatoes (mashed & roasted)
1/3 cup Fresh Spinach
1/4 cup Chopped Onion
2 Tablespoons Goat Cheese
to taste Salt, Pepper, Curcuma
1 tsp Olive Oil
Instructions
Preheat oven to 350F. Chop spinach, onion and oil in a blender until you have a yummy green puree.In a bowl gently stir together the sweet potato mash and the goat cheese.Fold in the spinach-onion mixture. Add spices - to taste!To get rid of the moisture in the mushrooms, remove stems, and place them face down (rim of mushroom down) on parchment paper. Put in the pre-heated oven and bake for about 5-8 minutes.Take the mushrooms out of the oven, flip around, and fill them using a teaspoon or melon baller.Bake for additional 10 minutes.Broil for additional 2-3 minutes to get them a little roasted.
Oh wow. I'm going to bookmark this page and I can't wait to try out this recipe. It looks like something that I would want to eat, and I could get a really great fan club going at any potluck that is treated to these mushrooms!
