Now I work at a gym - total opposite to the restaurant. Flipping dishes and making them healthier is one of my passions. I don't like fried chicken nor using the pre-grated parmesan. What about using a grill - and a wedge of Parmigiano Reggiano! Well, not a whole wedge all at once, but we do like a LOT of Parmigiano. I freshly grate the cheese from the wedge for the most intense flavor.
I came up with a healthier version of one of our favorite dishes. My George Foreman Grill is one of my favorite kitchen gadgets, and I usually prep a bunch of chicken in it for the whole week. This is why I usually use grilled chicken. But I'll share the crock pot version as well, so check out the recipes below:

You can either use grilled chicken breast like in this recipe, or to make it even easier:
Put the raw chicken breast in a crock pot, add the canned tomatoes and spices, leave on high for about 3.5 hours, and start from step 4 above.
Easy Chicken Parmesan Recipe

Healthy and Easy Recipe for All Time Favorite: Chicken Parmesan!
Cook time: 15 min
Total time: 30 min
Ingredients
- 4 Chicken Breasts
- 1 Can (14.5 oz) Diced Tomatoes
- 1 Cup Grated Parmigiano Reggiano
- 2 Teaspoons Granulated Chicken Broth
- 1 Tablespoon Italian Seasoning
- To Taste Salt & Pepper
- 1 Teaspoon Hot Sauce
Cooking Directions
- Grill Chicken Breast on George Foreman Grill or in a Pan
- in a small pot combine Tomatoes and all the seasoning (don't forget to taste and add whatever you like)
- Heat up to a boil
- Place grilled Chicken Breast into an oven safe dish, add Tomatoes
- Grate Parmigiano Reggiano and add the desired amount on top
- Broil for 5-8 Minutes
Serve with pasta or rice!
