Hurricane Irma Recovery // Bloggers For Florida

After hurricane Harvey hit Texas, me and some fellow bloggers teamed up to share Texas themed recipes, and most of all giving information about how YOU can help by donating to reputable charities.

   Healthy Muffins

Little did we know that another devastating hurricane would hit Florida, Southeast US, and the Caribbean. We want to spread awareness again, so today's post is dedicated to those affected by Hurricane Irma.

No-Fat Banana Muffins
There is no oil, or butter. It doesn't need it! Enjoy :)

For an even halthier version, use 3 egg whites instead of whole eggs, splenda or unsweetened apple sauce instead of sugar, and for the flour use 1 cup white & 1 c whole wheat. Using applesauce in place of sugar adds sweetness without the extra calories and, well, sugar. One cup of unsweetened applesauce contains only about 100 calories, while one cup of sugar can pack in more than 770 calories! You can sub sugar for apple sauce in a 1:1 ratio, but for every cup of applesauce you use, reduce the amount of liquid in the recipe by 1/4 cup.
Ingredients
  • 2 Eggs, beaten
  • 3 Ripe Bananas, mashed
  • 2 Cups All Purpose Flour
  • 1 tsp Salt
  • 3/4 Cup Sugar
  • 1 tsp Baking Soda
Instructions
Preheat Oven to 350F.Line 12 Muffin CupsCombine Beaten Eggs and BananasIn a separate bowl mix flour, salt, sugar, and baking powderStir the banana mixture into the flour mixtureMix wellPour batter into prepared muffin cupsBake for 20-25 minutes (check center of a muffin with a toothpick to see if it's done)
